One suggestion is to conduct a two-day workshop, with the first day focusing on the technical aspects (advanced camera functions, lighting, etc), with plenty of time available for Q and A (as opposed to a rush session, since some attendees may only be there to shoot the models).
Day One could be optional, and then Day Two would be the actual shooting day, which might start with you showing how you would do a photo session, followed by small break-out groups working with the models.
Many "workshops" turn out to be simply an opportunity for amateur photographers to shoot partially clad/naked girls. I already know how to get models, so I would rather invest in learning more about producing better images (since generally photos taken at workshops cannot be used commercially anyway).
I'm sure given your training and experience that you could fit in a lot of info into a very short time.
