I'm in the South, so I'm all about the chicken and dumplings. My father was sick for many months last year, and that was his favorite thing to eat and one of the last things he could/would eat. I made them probably 2 or 3 times a week.
Here's a different twist- I always made them with biscuit dough but I had some at a lady's house that were fabulous and she told me she used tortilla shells. I don't even cut them. I just tear them into dumpling size pieces and throw them in the pot. It's quick and easy and they taste really good. Even my dad liked them and I knew he would be super critical.
