All the stuff he said, you should be doing on a random Tuesday. I don't know what her personality is like. She might want to be pampered, she might want to go to the spa and just space out by herself for an hour or two without you, or get dressed up and go dancing.. hard to say...
But giftwise, when in doubt, go for jewelry. You really can't go wrong in this dept at all. Whether it be diamonds or cool hippie beaded accessories, you can't mess up. It'll be easy for you to pick something she likes and it's very personal. Girls like to show that sort of thing to their girlfriends too which will give you random points here and there everytime someone asks "Oh where did you get that lovely necklace?"
Flowers, teddy bears, soap crap etc... they all scream out that you don't know what the hell to get her or you're in a hurry, didn't think ahead which will just make her think you don't really give a crap.
