VPS is a great option when comparing to virtual, but it does have its limitations. It offers the security of a dedicated in that the actions of another should not have any iff-effect on your sites (unlike what can happen on a virtual plan).
However, there are issues such as inodes and open connections that do get in the way, and these are issues that are easily resolved with a dedicated server.
Judging by the specs you laid out, you can get a small dedicated and run all your sites on it without having to worry about too many open connections.
