Cute FTP Pro has a built in basic html editor that you can use.

Just right click the file on your server, edit, save, and that's it.

It doesn't save it on your hard drive at all, unless you ask it to.

I couldn't see how you could get it to use a different editor though - you seem to be stuck with the default one.
