Yiddish was the language Jews used during the past few hundred years (and still do). It's heavily influenced by languages like German and such. It was the language formed when they lived in communities all over Europe.
Hebrew was a dead language, that was revived to be Israel's national language. Like the Italians reviving Latin or something.
