I don't necessarily agree with this...some of the best restaurants and clubs in LA were started by people who worked for tips.
Back in the 80's there was a fantastic little place in Venice Beach, I can't recall the name, but was started by two bartenders, who continued to tend bar at their own place.
The fact is people in life make choices on what they want to do, what makes them happy. And just because you don't necessarily agree with it, no reason to find some fault in it, just because you don't have much self esteem.
