Just send the paperwork. I predict a shitstorm of problems if you back out now, plus how is that going to look on your part... You decide you don't want the car just because they need income verification? They will probably think you are some sort of scammer.
Don't know why they wouldn't have asked for that before they gave you the car though. Pretty stupid on their part.
