Stick with restos that use individual serving utensils, one for each and every item, it's the law in a a lot of places, you can see it in action at many all-you-can-eat self serve buffets.
The individual serving utensil is a lot cleaner and more sanitary then any gloved hand, after all you wouldn't take a piss by holding your dick between two big spoons would you?
