That's the Condylura Cristata, or, as mentioned, the "Star Nosed Mole". It has more nerve endings in it's nose than we have in our hands. I seem to recall that it can also identify 'food' vs. 'non-food' at a very fast rate, but I wasn't paying too much attention to the documentary.
