That's a good question, although single page is definitely easier to get in for the surfer I've seen sites with pretty complex tours that work well.
Depends on the niche too I suppose, big tit reality site doesn't need to explain that much more than to show some killing content and persuade about a great value, there is not much more inside anyway.
Personality sites / megasites or sites with more complex concept are probably worth multi page tour as far as to get the concept or to get familiar with the personality model is the key.
