Dig a physical barrier about 20 inches deep - the rhizomes or whatever their called can't go deeper than that. Even though they thrive on moist soild, they can't pass through water, so a little water trench also works.
However, the original poster asked if they give aything back to the soil - v. good question. I think they do cos they can turn crappy boggy soil into rich aerated soil so other plants thrive (if the bamboo isn't too dense. However, how well do they compost? I wouldn't mind knowing that.... I would think very very poorly, but curious minds need to know
Bamboo also has a higher tensile strength than steel, making it a great building material.
