If you buy the pickled type that may work and should, though I use fresh. You can buy pieces at every grocery story. Just wrap the whole unpeeled piece in a paper towel and put it in a zip lock to freeze it. It will last around a year that way if not longer. Otherwise it will spoil about at the same speed as a potato.
Then again you could just cover it with dirt and let it do its thing and water it every so often and dig it up when you need it. That would just be to much damn work for me.
