Read "In Defense of Food"


one of the most interesting points from the book that I had not previously considered is the effect of Globalism on nutrient values in food.


We aren't away of every micro nutrient, we only discovered omega-3 anything in the 80s, and for a long time believed that fat, protien, and carb was all there was. We didn't know of vitamins and minerals. Today, we still don't understand food chemistry. Steak is high in iron, but if you drink coffee with your steak, you don't absord the iron. No one really knows why either.


So, when we decide that Spain should grow apples, those apples and whatever nutrients they contain, used to be eaten or decayed locally, and returned to local soil. Now, that same nutrient is shipped to china, leaving the soil only the nutrients THAT WE KNOW OF to be re-introduced to the soil chemically through furtilizer. Over time, the nutrients that we don't add back, disappear entirely, and the soil becomes less rich year by year. Especially lacking whatever nutrients apples need to grow. Today's tomato contains 65% less lycopene than one grown in 1947 on the same farm...
