Dude, for breakfast there's a place that can't be beat. Seriously, hands down, it's the best fuckin breakfast place I ever ate at. It's called Tasty Crust.
http://tastycrust.com/ It's a little hole in the whole, dive. But man.. the breakfast... sooooooooo fuckin good. I recommend the pancakes.
Also, AM's right the Road to Hana is good one way. Once you pass Hana you can go a little further to Charles Lindburgh's grave, but not much further past that the road turns to dirt in some places. If you rent a 4-wheel drive then it's totally worth it.
We have a Jeep Grand Cherokee there and I drag the whole damn family on a trip all the way around from Pia to Hana, to Kihei then to Lahina and up around Kapalua and back down to Kahului and then home. It's soooo worth it. To basically get in a car, go straight, and end up back where you started. It takes a full day though. Oddly enough I can drive it with no problem, but I can barely go to Chatsworth from North Hollywood and not bitch about how far it is.
Also... highly recommended, take a heli tour. Also totally touristy, ask for the tour that'll take you to a place called the 'wall of tears' it's up towards the north side, high up in the mountains. You'll see like several thin white strings coming from above the cloud line. There are a lot of thin waterfalls. They look like strings hanging down against the mountain.
This video doesn't do it any fucking justice at all.
West Maui Mts during the day, taken from Pukalani where I stay.

same area, but at night.

Ulua sunset

Behind this church is where you can see Charles Linburgh's grave.

The backside of Maui, (past Hana, on the way back to civilization.) I swear that road looks and feels like it was built with one shovel full of asphalt at a time.
fuck.. I could post these all damn day...
