As for the hollandaise argument... HUGE time saver for making packet. Now this is where the experience comes into play. His packet sauce COULD be as good as what hes had handmade...since a ton of people dont make it taste right or simply fail at making it properly.
yolks - butter - lemon juice - salt - cayenne pepper - and sometimes a dash of some white wine... especially if used on fish!
Not to be confused with bearnaise sauce...
as for the poachings.... I like to stick with Honez' Method
