I would say the best way to start is to make some content and see if it actually sells.
It's your wife, and she is beautiful in your eyes, but she might not cut the grade.
IF your content actually sells and maybe you get a repeat order or two then you can look at getting someone to develop your solo site with the money generated from the content sales.
The thing to consider is also how far are you willing to go ... would you include other male/female guests in your videos ... let's be honest seeing the same two people going at can be boring .. so if you are going to retain whatever members you get, you will need variations to the script.
Maybe post up a pic of her (doesn't have to be explicit) and see the response
