my fellow amigos wm's try these original enchiladas (real enchiladas dont go with avocado!!)...
1- enchiladas poblanas (bathed with "mole", kinda chocolate sauce) covered with queso fresco (panela cheese) and stuffed with chicken
2- enchiladas rojas (get the red tortillas in any mexican food store, fry the tortilla with a lot of oil in a pan and stuff and cover it with queso fresco), add little square potatoes and serrano peppers fried too
3- enchiladas suizas or "verdes" (like poblanas but covered with green sauce, like Goya's green sauce), these stuffed with queso oaxaca or asadero (mozarella a good substitute too), found in any Publix
The best place to try the enchiladas in Mexico is in a little town called San Miguel de Allende, in the hearth of the country. Just go to the main plaza and there are many ladies preparing them
In restaurants, go and try the famous Sanborn's enchiladas suizas, they are the best (sanborn's available in mexico city, guadalajara, leon, etc.)
P.S. Im so hungry now!! I better go to my nearest McDonalds branch here in Mexico for a big mac
