I would sooooo skip the Eiffel Tower, other than to go to the plaza. The lines could mean you wait hours. If you walked the plaza where the Tower is, then got back on the Metro and crossed the river, there is a great wine museum that does a wine/cheese tasting at the end of the self guided tour.
Sacre Coeur is nice, Notre Dame during Mass is incredible (especially on a high Sunday, but you're going on Thursday), whether you are Catholic, religious, or not -- though the Japanese tourists with the flash bulbs going off in the middle of the service is not incredible or cool. You can also walk around Ile de la Cite and get a good view of the boats on the Seine.
The Champs Elysee is a good idea, there are loads of stores with awesome displays (I always like the Renault Atelier) and some good cafes.
