We always use camcorders. The quality you get out of webcams is pretty weak, plus you don't have any useful features such as an optical zoom, etc. Camcorders on the other hand produce really good quality video because they have much larger lens, a better image sensor, optical zoom, and more.
Connect your video camera to a capture card with onboard mpeg compression and you're all set.
