Do they actually make 15% to 20% of their takings?? They would make more than the restaurant owner than! No restaurant owner has such a high margin after paying all the expenses on the end of the month. So it's better to be a waiter than the restaurant owner.

Not everybody pays 15%. A lot of times the house will take some of the money. Or the waiters will have to also pay out other staff members for their assistance. Plus, waiters make very low wages.
I think a good waiter at a decent establishment can make pretty decent money. A bad waiter, anywhere, is not going to make money.
