I know a guy from Chicago who works the Midwest County and State Fairs. He does deep fried spiral cut whole sweet potatoes and they are a fantastic hit everywhere he goes. He has several condiments at his stand. Salt, various peppers, garlic, powdered sugar, cinnamon etc, etc.
He also does deep fried spiral cut whole Russets and Vidalias. One potato totally buries a 10" paper plate, at least 8" high. People line up to get them. That's all he sells, there's only 3 items on the menu
