Very simple no recipe recipe.
Dry off the bird.
In a bowl mix up about a cup of greek yogurt or mayo. Grate in the zest of 1 lemon or two limes. Add in the juice of the 1 lemon or two limes. Add in about a teaspoon or pepper and salt. Toss in 3 tablespoons fresh or 1 tablespoon dried oregano.
Salt and pepper inside of bird. Tuck the wings, cut slits into the ass end of the bird so you can tuck in the legs to secure them from flopping - or just tie them off with string.
Then cover the whole bird with the mixture. Rub it on evenly. do make sure the bird is dry first or it more of it will fall off. Drip tray a must. Coat evenly and cook as normal.
Only way to make better is to brine the bird first. Or as an extra secret cut some slits in the breast, thighs, and legs. To create more surface for the mixture. However if you do that you may as well double it up and spread some under the skin too.
