Best Linux Distro for FLV encoding?

Which is the best Linux Distro to setup a FLV encoding server on. Have Ubuntu on the box right now, but seem like only tools are command line based?

Anyone have experience setting up a linux box to just be served video and encode it to flv?

If I can't get this working, I'm just going to go out and buy a mac pro and install Episode on it and let it do the chunking... but since I have this other box here I thought it would be nice to get it to work. I already have it remote controllable via my other macs..
