Steps to take -- make sure the person actually owns the domain you want, and further that they have given you valid contact information that is consistent with linkedin/xing/facebook/whois/ and other information.

Since I mostly buy domains, I generally research the person on linkedin/xing/facebook/whois to ensure they are a real person -- after that it depends on whether you want to spend the money for escrow or not.
you can start your own service to help buyers and sellers make sure the other party is legit.

In my opinion buyers have the advantage using paypal...since they can charge back funds...in which the seller can lose the domain name and the funds.

The last 2 times I spent over 1k on domains I used moniker escrow paying with a cc and the 2nd time I used paypal since the person was a well known domainer in the industry. The most I spent on a domain selling on GFY was $425 for a tube domain...used paypal.
You also need to be careful who you give your domain registers account # to...your giving away half the security.
