I barely cover with water, and heat it on high until it's almost boiling, then back it way down to low or medium low heat, just a bubble. Simmering that way for 5 minutes or so, then turn off the heat and let it sit. I use a meat thermometer to be sure, but it takes about 20 to 30 minutes longer and they are fully cooked to safe temperature.

I skim off any scum/foam and discard, and then save the meat and poaching liquid in a plastic container. The liquid is flavorful, so I use it in soup for the most part, or add to rice or plain noodles to add flavor.

Lasts about a week in the fridge, maybe longer
