If they need past proof of taxes then you might have to tap into your business funds and have an accountant handle the last 3 years of payroll you "forgot" to take care of. The more cash you have at your disposal the higher you can claim your income was/is. If your business funds get tight you can always invest in your own company with that money it's not like its all going to be taxed.

the good news (if any) my shady accountant NEVER filed my taxes last year, so I could probably have some things changed around, but waiting to hear back from a local accountant which I'm sure will cost me a bit
