As a business model tips rather than a fixed price can do quite well as I have found in the past that if you say to someone 'pay what you think something is worth' rather than 'the price is x' their idea of what something is worth is usually more than the fixed price would have been. You put them in a position where they become a bit more generous than maybe they would naturally be as they are trying to impress and don't want to look tight
