I loved Barcelona and Mallorca, but...
They should speak Castellano at least. Living in Barcelona or Mallorca, learning Catalan or Mallorquin would be a plus if they will go to a British or international school. Think of sending them to a public school, itīs much easier for the kids to make friends. But they are tought in Catalan/Mallorquin.
It always depends on the part of town where you are living.
There is no problem with spanish hospitals or medical care.
Houses with ocean view are usually much more expensive. If you just want to be able to get to the beach in a short time, thatīs no problem.
Forget about it. You are required to speak Castellano at least.

- Not expensive (I'll be renting and I don't want to pay more than 1,000 euros a month, really)

At the moment you can rent houses cheap, but I donīt think youīll get one below 1000 € per month.
No problem.

- Not stuck out in the country. I'd like to be in town or a city and able to walk to most places.

Try
Costa de la Calma. About 20 minutes from the airport, nice beaches, many English folks living there.

- Your car in Spain

Keep in mind that you are required to register your car in spain if you are living or working there. (183-day rule) Some people do not comply to this law but it can cause much truble if you get caught. Your car could be taken and it costs about 20 € per day. Prepare to wait for your car about a year to get it back once it has been taken by authorities.

And let me repeat it: If youīll move to Spain, be sure to speak Castellano at least!
