North Eastern Holland is mostly flat, wet and cold. Good schools here though (then again, you can find those just about everywhere here), but the people just aren't very outgoing. Cold and rude is how most foreigners describe them, although that might be a bit harsh
Amsterdam is nice if you like cities, but it has a rather high crime rate and might not be the most suitable place for a young family. Something like Utrecht would be a better choice, imo, a bit smaller than Amsterdam, but nicer surroundings, better atmosphere, and it's still close enough to cities like Amsterdam and Rotterdam to go there when you want to.
However, the south part of Holland could also be a good choice (e.g. Maastricht). The people are a bit more outgoing and warm there, although it most definitely isn't quite the same as, say, Amsterdam with regards to things to do and such.
I guess it all depends on what you want, do you want a big city, suburbs, a rural area or ... ?

VERY nice info. Thank you loads, I'm going to copy this into notepad or somewhere so I don't forget it. I've added you to my ICQ list by the way and next time you are free (not playing computer games ;) ) I'll hit you up for a chat.
