Laos. you could live in Vientiane on 500 a month. great food (and real high end places for dining), *super* nice people, french influence, smoking hot weather and cheap cheap. would be better to have around a grand/month, but yeah it could be done on less. lots of white girls, all tourists lol. once i get too old to snowboard/downhill bike, i'm pretty sure that's where we're going to move.
