The only thing I hunt nowadays is wild boar in the Central California cherry trees. They spend all summer eating cherries and it turns the hams sweet and then I cold smoke them with apple wood. Then I wrap the hams and hang them in my basement for 16 months and turn them ever month our so to get the fat juices evenly through the meat. Serve thinly sliced and it is delicious.

Myself, I love venison. Could eat deer, moose, or elk meat daily and love it every time. I prefer wild meat over beef any day of the week.
That ham sounds delicious...
How'd the sturgeon go for you this year? I was tied up on the road working for most of the summer, never got a chance to get out much aside from a little trout fishing.
