Define what you are looking for in a flight -- that makes a big difference.
If you're flying US domestic and you don't want to fuck around, Southworst is the way to go, it's like the Greyhound of the skies. Personally I don't care for them, but that's just me.
Transatlantic service, if you can get on a flight on Air Tahiti Nui, they rock, in all classes.
American has really let the quality of their interiors slide lately, even in first, imo. United has been making a major push to upgrade their interiors to the point that they have the most room, seat pitch, etc in any class of service for a US carrier flying internationally.
Air New Zealand is a GREAT airline. Nice people, clean planes, you can move your legs in economy, free drinks, food, etc.
Air Lingus, Ryan, EasyJet -- those are like Southwest in the states - you get where you are going, that's for sure.
I've flown some insanely crappy airlines in the Caribbean, and a lot of the airports there are so manana mentalitied that it's nuts.
Balair/SwissAir in it's original deal used to be my favorite.
Don't care for KLM at all.
