BRUNO movie. Legal question. Does anyone know how they do this?

So yesterday I watched BRUNO (http://www.imdb.com/title/tt0889583/) starring comedian Sacha Baron Chohen (BORAT) and as expected, laughed my head off during the whole movie. For anyone who hasn't seen it, Sacha plays Bruno who some how plays amazing jokes on individuals, groups, celebrities and even arena's full of people. In one scene, he upsets a focus group watching a new TV show. In another he pisses off Paula Abdul. The last bit where he freaks out a bunch of rednecks in Alabama is just amazing.

My question is, how does he legally do this? Don't these people have to sign an agreement giving permission to be in his movie? And considering some of the humiliation some of these people go through (including some serious career killing moments), why would any of them choose to still be in the movie? Or is it possible that some of these agreements are tricks or somehow so iron clad that you're fucked no matter what?
