I celebrate Christmas. I will say Merry Christmas when appropriate. If I'm talking to a bunch of Jewish folk, obviously I will not say Merry Christmas. Happy Hanukkah.
It's not rocket science and people blow it way out of proportion. If you celebrate a particular holiday... you should represent that holiday. That is a part of you. Do not sterilize yourself just because others cannot handle Christmas, Hanukkah, Rosh Hashanah, etc. etc.
