Solar panels. I was going to say generators, but those are slaves to fossil fuel. If you had shitloads of solar panels (assuming we were not in some sort of nuclear winter) you could make a killing selling them to people in order for them to charge banks of batteries or otherwise provide electricity.

New guess: grains. You can make them into flour and pasta, or plant them. Massive amounts of grains seems like a reasonable thing to stockpile.
