I don't use it that much, but Easy Thumbnails - http://www.fookes.com/ezthumbs/ - knocks out some good galleries.

I've also been using Thumbs Plus for years.

Most of my gallery tools are server based now, but editing pics and cropping thumbs takes forever compared to Thumbs Plus and Easy Thumbs.
