You bring up a good point here.
1) If he had a non-disclosure, the coach would already have known he got fired and therefor the nda doesn't apply in this case since the other party already had knowledge.
2) If the information is false, the coach can't sue, and therefor the organization has no losses to recover from him to begin with.
It doesn't sound like they have much of a case to be honest.
