Darling, I know Amsterdam pretty well, been there about 12 times in 3 years and walked the city many times over. Instead of a hotel, I recommend you opt for an apartment or houseboat. A lot more privacy, access to a full kitchen that you can stock with the amazing NL produce, gives you much more options for late night munchies (or in your case, cravings

) when food options dwindle to nothing after 1am.

As far as food goes, it's hard to go wrong there. You definitely want to experience a rijsttafel, or Indonesian rice table, where you get a ton of small dishes brought out to hot plates you have at the table.
For fine dining, I have to recommend
Fifteen, the OnlyTease folks introduced me to that place and it was a great experience. Be prepared to spend a few hours there since they take you through several courses. The
Sea Palace Floating restaurant is pretty good too, but they have a Chinese area right off the Red Light District that offers great eats as well. If you can find the Mongolian restaurant in that Chinese section, definitely get their medicinal tea, it will be the best tea you've ever tasted in your life.
