If you are in business either know contract law or find someone that does.
Alternative solution ? be an employee of someone that does.
If you don't do one of the above you won't have the leverage to get paid when the situation sours.
For the most part assume people will be honorable in their agreements, I have found most are ? when they are not ? a written contract is essential ...
