Note that you probably will want to install from source because the CentOS version of ffmpeg in the repos is usually missing a ton of options and codecs - in addition to usually being very out of date You will need to look into which configure options you need to enable. That is the whole key to getting a useful install. "./configure" alone probably isn't going to cut it for a useful server.
