Most of them don't. That they do is just a talking point. There are some that do, but in order for them to get it they have to have a child here in America. that child would then be a US citizen and they could then get welfare/food stamps for that kid. I'm not 100% sure how that works. It would seem to me that if you are here illegally that as soon as you applied they would catch you and deport you. I wonder if many of these people are using fake SSN's etc. There was a woman that worked with a friend of mine for 15 years who turned out to be illegal. She had a fake SSN and used it to join a union, buy a house, get a car and lived a normal life. She was in the US for 20 years that way before she got caught. Still without fake documents or a kid born here you can't just come into the country and start getting welfare.

You can get free healthcare at the ER and urgent care centers. You can also hit up the food banks. Many of them have a legal friend that rents a place and then many others live with them.
