There are only certain circumstances in which you
have to make vhost changes.
1. if you plan on using sub domains over sub directories.
2. if you plan on using domain mapping for use of multiple domains
Now, if you want simplicity.. all you need to do is set up a subdirectory installation for the single domain... yes, it's better to use sub domains but if you can't then you can't.
Also, while you're half correct regarding plugins... most of those same plugins have been redeveloped for wordpress itself, or alternatives can be found. Not to mention,
most of the normal wordpress plugins work with multisite... so long as they've been updated for WP3.0 compatibility anyway. Sure, there are a handful that don't work properly but they are quite rare anymore.
