Remove the tops from the chilis and shake out as many of the seeds
as possible. Caramelize the onions, garlic, and carrots in a large
sauce pan. Add the remaining ingredients and simmer uncovered for
90 minutes. Use a hand blender to reduce the remaining larger pieces
to about 1/8" bits. Simmer for another 90 minutes. If sauce is still
a bit thin add more ketchup. Allow to cool then store in glass
bottles and refrigerate. DON'T GET NONE ON YA!
Sounds good. I'll try that I think, but swop out my fresh chilli from the garden for the dried.
