As stated above, some people, like my wife, have a gluten sensitivity called celiac disease. For everyone else, gluten free / wheat free is this year's silly fad diet. Anything but "eat a balanced diet and exercise", you know. It sells to all of those people who bought into "no carbs" last year, but didn't have the self discipline to do it. Now we have the watered down version "ok, you can have any carbs except wheat".
Wheat has for centuries been one of mankinds primary sources of protein, the fourth most important or so. For health, the answer is still the same - a balanced diet and exercise. Fries for breakfast STILL isn't healthy because you didn't have toast with it.
