I would say dont get too crazy, go simple but good. Probably some fresh white fish (halibut or alike) and king prawn would do. Dice it, with some onions, garlic, cilantro and either habanero or a less spicy pepper, let it all marinating in lime/lemon juice for 8 to 16 hours (so the seafood cooks in the acidity of the lime) and serve it with some chips.
It should please the wife and it certainly is a tasty treat
