Agreed the oil causes the fire. Let's consider what causes the oil to spew out.
Let's say there is a total of only one cubic inch of ice crystals on the surface of the turkey. When that very thin layer of ice crystals turns to steam bubbles due to the hot oil, it expands to 1600 cubic inches. 1600 cubic inches is seven gallons of steam bubbles suddenly appearing in the oil. That extra seven gallons causes it to overflow.
