Any server that expects to get paid a % based on the bill amount is a moron. You get paid based on services rendered. Cracking a bottle of 2-buck-chuck isn't any more difficult than cracking a bottle of 20,000-buck-chuck, so your rate of pay should not change.

If I go and drop $1,000,000 at a restaurant to order a whatever-the-fuck that took you 30 seconds to deliver to the table, I am not paying you $200,000 for the effort. You are not any more worthy of the money than the guy who took the same amount of time to deliver the $20 meal to anyone else's table.

Servers who believe a "tip" should be mandatory regardless of level of service should not be servers to begin with. A tip is for exceptional service, and is based on my level of appreciation for the service. It has no relation to the bill.
