You'll have plenty of evening parties and food there
While at the show, last year CECash provided free food and drinks to everyone during tradeshow hours, probably they'll do the same this year, thumbs up for them anyway!
Close to the hotel you can't sightsee much but the ocean and beaches and the waterways, but some parties are located far from the hotel, and you'll see the area when you go there by limo, or whatever the organizers provide, when you return you'll be drunk enough to not notice anything.
In Miami, before or after the show, you can visit the art-deco district of Miami Beach (a cheap but good hotel option there is the Clay Hotel), the downtown (take the inner downtown tour with that mini-train), Coconut Grove, maybe Coral Gables, and a $40 trip to the Everglades to see alligators live while on the airboats.
