grillers: inside pls....
so I'm doing 2 racks pork ribs today... my life sucks trying to get the silver skin off... suggestions?
I'm using a knife to cut the skin, a fork to pull up the edge and then pliers to pull the skin off... is there a better way?
and do I need to skin the back of the ribs down to bone to get all the silver skin off?
other than that I let the ribs sit over night with Chipotle rub, sprinkled with a bit of chocolate habanero flakes... dropped them in the smoker... going 2 hours, then I'm going to inject those fuckers with AJ, wrap them and do another hour 1/2. in the smoker, then onto the grill mopped with BBQ sauce mixed with pineapple marmalade....
